Preserving what nature gives us

When we make wine, our main focus is on preserving the fragile flavours of each grape and vineyard. This involves meticulous manual work and close attention to detail. Our new press house is constructed in such a way that we can use gravity for crushing and pressing to reduce mechanical pressure on the grapes. Gentle pressing, a slow sedimentation, fermentation at cool temperatures and gentle filtration preserve the fine grape flavours and give an elegant structure to our wines.
